Ingredients:

  • 1 tub of whipping cream or Orley Whip
  • 1 can of caramel
  • 2 bars of Peppermint Crisp chocolates; grated finely or crushed (or equivalent)
  • 2 packets of Tennis Biscuits (or equivalent)

Method:

btyIn a clean bowl, whip up the cream using and electric mixer or stand beater until stiff peaks form and the cream holds it’s shape.

TIP: You can make your make your own caramel by boiling a standard can of sweetened condensed milk for a few hours (check Google for exact instructions).

Add the caramel and continue to whisk until the caramel is completely incorporated with the cream; it should be smooth and airy and light.

bty

Spoon in half of the grated / crushed chocolate into the caramel cream mixture and fold it in thoroughly.

TIP: If you want your pudding to be extra minty, add in some peppermint essence / extract.

In a dish of your choosing (I don’t know how big the dish I used is, but it is my biggest) place a layer of biscuits in the bottom, then scoop in a layer of caramel cream, enough to cover all the biscuits.

Continue layering in this way, ending with a cream layer on the top.

All that is left to do is to take the remaining half of the grated chocolate and sprinkle it all over the top! Put it in the fridge and chill for at least 4 hours!

Viola! And you’re done!!!!
